What is ULT (Ultra-Low Temperature) Tuna?

ULT (Ultra-Low Temperature) in the food industry usually refers to freezing and storage under -40F. For most frozen products, 0F and under is more than sufficient in regards to storage. However, ULT storage is necessary for premium high-fat products such as Bluefin Tuna to prevent oxidation and yellowing of the fat content. Additionally, in the U.S., proteins that are prone to discoloring when oxidized, such as Hamachi and Ahi Tuna, are usually treated with Carbon  Monoxide. ULT storage is the best alternative to fresh in regards to freshness/color and umami retention, in addition to providing the convenience of inventory management and food safety.

Southern Bluefin Tuna (Thunnus maccoyii) from the Indian Ocean, which has a well-established reputation for its mildness, is also in our product offering. Bluefin Tuna from this area has less fat content than its counterpart; however, the fish selection is conducted carefully to maximize the yield for premium toro.

Bluefin Tuna is the most premium finfish in the seafood category. Most Bluefin Tuna in the U.S. are Atlantic Bluefin Tuna (Thunnus thynnus) and originate from Mexico and countries surrounding the waters of the Mediterranean Sea, such as Spain, Croatia, Malta, Morocco, Turkey, and Tunisia. ULT Tuna that is brought into the U.S. is usually produced by Bluefin Tuna farmed in the waters of the Mediterranean Sea.

- Bluefin Tuna -

For Sushi Applications, Bluefin Tuna offers Ōtoro, Chūtoro, and Akami. Bluefin Tuna is the true Wagyu of the Sea in regards to price point, portioning and separation of the whole fish, and the extravagant marbling of the meat in its fatty portions. Ōtoro usually has prominent fat strandings and is the most expensive part of the tuna. Chūtoro is the second fattiest portion. Poseidon Group International has strict specifications where Chūtoro is generally only yielded from the Haramo (belly triangle) portion. Akami directly translates as Red-Meat and is the leanest and most abundant part of Bluefin Tuna.

- Bigeye Tuna / Yellowfin Tuna -

Most of the Bigeye Tuna (Thunnus obesus) and Yellowfin Tuna (Thunnus albacares) that Poseidon Group International procures are wild-caught in the Indian and Pacific Oceans surrounding Australia. Both of these tuna species are grouped as Ahi in the food industry, as it usually is in Hawaii. Compared to Bluefin Tuna, they are much leaner and only produce Akami for Sushi Industry standards. 

The majority of Ahi Tuna imported into the U.S. is treated with Carbon Monoxide or  Tasteless Smoke for preservation and color retention. CO Treatment is categorized as  GRAS (Generally Recognized As Safe) by the FDA; however, it can result in an unnatural pink hue and give off a slightly sour flavor profile. For end-users searching for a more natural option, Fresh Whole (GG/HG) or Loin is the way to go; however, some craftsmanship is required in cutting to maximize yield. Finally, for those looking for the best of both worlds, ULT Bigeye/Yellowfin Tuna Saku is also in our product offering is growing rapidly in the U.S. market for a better, more natural choice.

An Ultra-Low Temperature Chest Freezer is recommended for storing ultra-low temperature tuna. Unlike a general freezer, it supports freezing of products down to -49 °F. Thus, long-term storage is possible without degrading the quality of food.
